It is Antoine Thibault who is at the helm of this traditional kitchen featuring local Berry produce. Traditional, inventive cuisine that follows the seasons and their sublime fresh local products with originality. Autumn game, winter scallops, spring lamb and summer prawns are just a few examples.
In the kitchen, local prroduce is shaped with talent and precision that reveals itself on the plate in the form of the chef’s berrichon paté, a piglet’s rib lacquered with honey and Berry lentils or a casserole of berrichonne dessert and its chocolate sauce. Another specialty that makes the mouth water: sweetbread with langoustine in a tulip shaped case!
